i want to put 36" Iroks on my 1991 Sonoma but the widest rims i can find that i like are a 20x9 and the tires are recommended for a 2x10 rim is this a big deal and what will this affect

A 20x9 will work just fine. The only thing it will affect is the appearance, but only by a little bit. I personally prefer narrower rims on tires for the look.
