Anyone know why at idle my oil gauge shows like 30 and when I acclerate it pegs way off the scale like PASSED! the max and stays there even after I am at a contant speed. If I can get a picture I will try to post it.

What vehicle?
More than likely its a faulty sending unit.
or
When was the last time the oil was changed? If it's trying to pump sludge through the system then it could be pretty high. But that's not a likely scenario.

1992 GMC Yukon GT 5.7L TBI, I have changed the oil twice sense this started. I thought that could be it(Sending Unit) to I guess I need to find it and check. Do you know what the PSI should be at at curb idle?

I don't know for sure for that engine, but if I were to guess I would say 20-30psi sounds correct for idle, with 40-60psi depending on RPM.
